involves simply chopping an
apple, onion and celery into
a casserole to make a bed for
browned meat, then covering
it with a quilt of the same
mixture.

This time, while the chops
were browning, | used a little
margarine in the Multi-Chef
and sauteed the chopped
fruit and vegetables. (Don't
peel the apple, just core it,
and use one for the bottom
and another for the top.
Maybe five or six stalks of
celery, divided, and one
smal! oniun for each of top
and bottom.)

When the dish was
assembled, a little water in
the browning pan helped to
deglaze all the nice brown
bits—-and got the pan clean
at the same time!—and that
was added, along with some
salt and pepper and
Cavender's,

Put on to simmer for a
couple of hours it made an
easy main dish, sup-
plemented with a couple of
green peppers stuffed with
‘Tice, cheese, green onion and
crumbled crisp bacon which
baked coolly in the toaster
oven.

It provided a substantial,
fragrant meal without mak-
ing the whole apartment
unbearably warm. After all
the yelling we did about
April, May and June, we
don't complain!
