disturbing fellow diners.

You, of course, could buy the
raw materials for your feast, load
up the mini-van and head home or
to some preferred picnic area to
consume the bounty of the Quay.

Or you could take a window
table at the southeast corner of the
market, secure the kids in seats
behind that table against the wall
and sample how some of the
Quay’s small restaurants present
the bounty of the Quay.

the burger-slinging trade is an ad-
mirable milestone, considering
that one hamburger-stinging year
is equal to 10 regular years.

The Dex duo of Cal Ostrander
and Monty Cooper has instilled
some kitchen craft and a good
deai of imaginative culinary
sophistication in the Dex menu.

Using ingredients from the great
Quay larder that surrounds them,
they have elevated the hamburger
from the basic ground-meat

sandwich that it all too often re-
mains in less artistic hands, to the
compact American meal in a bun
that it was meant to be.

Dex hamburger buns, for exam-
ple, are supplied by Tino’s Bakery
on the other side of the Quay.
They are white with a marvellous
chewy finish that makes them
ideal for containing and com-
plementing the rich Dex burger
accoutrements.

All Dex hamburger patties are %
of a pound of Grade-A Alberta
beef grilled over open flames, still
the most flavorful way to cook
ground meat.

Dex burgers range from the
Deluxe ($3.25, loaded with
pickles, onions, tomate, lettuce
and special Dex sauce) to Moroc-
can ($3.95, patty finished with a
honey glaze and topped with
crushed peanuts, mayonnaise, let-
tuce and tomato) and the all-
mighty Yukon ($4.50, patty finish-
ed in maple syrup and topped
with grilled ham, fried egg, ched-
dar cheese, mayonnaise, tomato
and lettuce).

For those who are not fans of
beef, whether it be from Alberta or
elsewhere, Dex offers a trio of
non-beef burgers: Chicken ($4.25),
Salmon ($5.25), and Veggie
($3.95).
