Stir-fried Brown Rice 5 ¢. cooked and cooled fong grain brown rice ‘2 oz. cooked bacen. crisp, medium dice (save the fat} 5 oz. medium diced red bell peppers 5 oz. medium diced onions 5 oz. medium diced celery 8 oz. fresh or frozen green peas 2 Jarge eggs 3 Tbsp. soy sauce or to taste 3-4 stalks green onions, cut into thin match stick pieces 2 Tbsp. canola or peanut oil Method: Select a large heavy skillet or a wok. Prepare all tie ingredients. Place the fat into the skillet. Whisk the eggs and pour in, make into a thin omelette. Remove, cool. Cut into very thin strips. Add rhe peanut or canola off. Stirfry the peppers, onions, celery and frozen peas for ] minute. Add rice and the crisp bacon pieces. Add the soy sauce to taste. (You may wish to add a littic sesame oil for extra flavor.) Stir- fry until the rice is hot. Check for flavour. Place onto a serving platter, decorate with CEE strips and the green onion. Serves 6.
