Rub duck generously with mixture. Let stand al room temperature for 1 to 2hrs. Place on rack in baking pan. Roast in preheated 300° oven 3 hrs. or until crisp. Peel orange sections, reserv- ing juice. Combine orange sections with wine. Let stand atroom temperature. Inheavy large saucepan combine sugar and vinegar. Cook uncovered over high heat until carmelized, about 2-3 mins.. Stir in stock immediately. Skim off fat from duck pan juices. Add pan juices and drained juice from orange scc- tions to carmelized stock. Com- bine 2 tsps. corn starch with 2 tbsps. cold water. Add to sauce- pan. Cook over medium heat until thickened and bubbly, stirring constantly. Stir in orange sections. Spoon over duck sections and serve.
