Mole Hand Rolls

Turkey with mole is a
Mexican classic and a good
way to take advantage of
boneless B.C. turkey breast.

Ke. raisins

2 small, dried whole red
chilles, (remove stems and
seeds)

unblanched sliced almonds
2 Tbsp. canola oil

6 cloves garlic,
chopped

4c. fresh chopped shallots

1 whole chilpotle pepper,

ground cloves, black pepper
and salt

§ canned Roma tomatoes,
drained and crushed

2% c. poultry stock or water
1 flour tortilla, dried in the
oven and roughly chopped
6 oz, Mexican Mole choco-
late, (ie.. “Dona Maria’’)
4%. whipping cream

Soak raisins in water until
soft (about 20 minutes),

In a skillet or in a 250°F
oven, dry roast the chilies
(about 5 minutes), then the
sesame seeds and finally the
almonds taking care not to
burn them. Set aside.

In a skillet, add the oil
and saute garlic and shallots
until translucent, Add
chilpotle pepper, spices and
stir for 2 minutes.

Add tomatoes, drained
raisins, chilies, sesame seeds,
almonds and stir over medi-

Add stock and dried tor-
tilla, stir and simmer partially
covered for | hour.

Add chocolate and stir
until dissolved, Do not boil.

Transfer to a food proces-
sor or blender and puree until
smooth.
