Remove it from heat; then stir in the chocolate and butter. Bring 4 inch water to slow simmer in a skillet. Set the saucepan in the skillet over low heat. Stir mixture just until chocolate is completely melt- ed. Remove trom heat. Pour chocolate mixture into shal- low bowl. Cool, cover and refrigerate until firm, at least 2 hours. Place cocoa powder into a dinner plate. Line the baking sheet with wax paper. _Dip a small spoon into a glass of warm water, wipe off the excess water and quickly scrape it across the surface of the chilled truffle mixture to form a rough 1-inch ball.
