This one goes together in a
breeze and won raves from my
family last Sunday dinner. It’s a
manageable size but even then it
would feed 14 people adequately.

Since it’s quite rich, cut smallish
servings,

PUMPKIN CHEESECAKE
1% c. gingersnap crumbs (I
hought a bag of generic ones at
Save-On and ground them in my
food processor, it took iess than
half a bag.)

% ce. butter, melied

2 — 8 oz. packages cream cheese,
room temperature

VY c. sugar

“’% ¢. canned pumpkin
Prepared pie filling) . ‘
% tsp. ciniamon ae.
Ys tsp. each: cloves and nutmeg

2 tsp. vanilla

2 eges .

Stir the. crumbs and melted
butter together and press onto the
bottom (only) of a 9° springform
pan. ,

Beat everything else together
until very smooth. Pour into pan
and bake at 350°F, 40-45 minutes
or until the centre is almost set.

Chill well before turning out.

I topped ours with whipped
cream and sliced almonds.

unless I’m entertaining on a large
scale, it’s easier to make biscuits,
muffins and desserts myself.

However, the other day ! was
passing a mall bakery and picked
up a package of four large cheese
scones for $1.99. .

If they had been goad, the price
wouldn’t have bothered me very
much — everyone is entitied to the
occasional treat.

They were awful. The flavor of
the cheese was everwhelmed by a
nasty tang of baking soda.

Cheese scones don't need to be
sweet, either,

Here’s an ecusy recipe for
scones. Inchide sugar if you're in-
cluding currants and leave it out
for cheese ones.

SCONES
1% c, flour
2 Thsp. sugar (omil for cheese
scones)
4 tsp.

Ya tsp. salt
Yc. shortening
Yc. currants OR % c. grated
strong cheddar cheese
i egg
Yc. milk

Combine dry ingredients in a
mixing bowl, Cut in shortening.
Two knives criss-crossing or a
pastry blender makes the job easy.

Stir in either currants or cheese.
Beat the egg and milk lightly
together with a fork or whisk.

Stir into the dry. mixture,
quickly and lightly. Form dough
into a bail and flatten to a half-
inch,

Cut in circles with a round
cookie cutter or the top of a water
glass. Bake at 4S0°F, 10-12
minutes.

You can also form the dough
into two six-inch circles and mark
in wedges. :

This recipe makes cight large
scones, for about 75¢,
