54 - Weanesday. December § 1990 - North Shore News FOOD Meatballs always in good taste MEATBALLS ARE one of the most satisfying meals known to cooks. Part of the appeal is the sauce or broth they are served with. They lend themselves io noodles or pasta -- both relatively inexpensive and neither needs peeling. They keep well — in fact, anv meatball is as good or better when reheated. There's a robust satisfaction in serving a feed of meatballs, especially on a rainy Decentber afternoon. Kids rarely turn them down, husbands like sandwhiches made from lefiovers and some odd characters teach the dog to do balancing acts with a meatball on his nose. Last week | passed along two of my faverite meatball recipes — Big Sicilian-style and tiny cocktail bites. Here are some other good ones: Chinese-Style Pork Ball Soup 1 lb. lean ground pork dash nutmeg 1 white dinner roll, grated (or stale white bread, crumbled - 1 slice) 1 egg yolk 1 teaspoon cornstarch Broth: 6 cups chicken stock (I use Chicken-In-A-Mug) Barbara NicGreadie BUDGET BEATERS 1 onion celery tops (any wilted ribs, tuo) 1 tablespoon soy sauce Add later: about 18 smali whole mushrooms Ys cup dry sherry YY Ib. shelled caw prawns (op- tional) Prepare the pork balls by mix- ing all ingredients and forming in- to walnut-sized balls. You may wish to add salt. Refrigerate meat balls while broth simmers. Combine ingredients for broth in a large pot. Bring to a boil and simmer gently for about half an hour, Strain. Return to boiling and add pork balls. Simmer 10 minutes and add mushrooms (and sherry). Simmer three minutes and add prawns, if vou dike. Simmer until prawns turn pink — no longer. Garnish with chopped green onions. Serves sit asa starter. Scandinavian-Sty le Meatballs Tb, lean ground beef 1 medium onion, finely chopped Ucaup mashed potatoes (good use for L.O.*s) ‘4 cup fine, dey breadcrumbs '. cup whipping cream tegp salt and pepper '4 cup snipped parsley Sauce: 2 tablespoons flour I cup whipping cream (or coffee cream) Combine ingredients for meat- balls in a large bowl or in your food processor. Beat until fluffy and very well combined. Form in- to one-inch balls. Chill. Cook gendy in a non-stick pan, rotating the pan so that all sides are lightly browned. Remove meatballs. Stir flour into pan and stir until blended with drippings. Add cream and stir until smooth and thickened. Return meatballs to sauce.
