That means from now unt early spring, we can all enjoy these wonderful fruits in sal- ads, pies and other favorites dishes. The best way to select your pears at the market is to press vour thumls against the stem end of the pear. Ripened pears will be slightly soti to the touch. Most pears do not change color as they ripen, however, the Bartlett pear will tum from green to yellow. This type of pear is available all year around, although they tend to be at their best from July through January. The Baruett is very sweet and is wonderful for fresh cating. Some other popuiar vari- edes are the Anjou, Bose and Seckel. The Anjou pear is available from October through June and is a favorite of chefs for cooking. This is because it tends to hold up well throughout the cooking process. Bosc pears have a beauti- ful shape with a long neck and rusty brown color. This makes them ideal as decora- tions for your table. Seekel pears are a little more difficult to find. They are generally very small and have a reddish-brown color. These pears are particularly sweet.
