Unfiddly menu for a June wedding showe: IF, LIKE me, you check your supermarket receipt as you unpack your groceries, you’ ll be just as angry as I am when the ink used is so faint that it’s unreadable. You'd think with all the money spent in various promotions, stores might be able to provide good ribbons for the registers. More annoying, f generally don’t check the receipt until I’m home so it’s too late to complain. For that matter, what good would it do to complain? Would the checker replace the ribbon and run your order through again while seven other shoppers wait with patient smiles? But if it annoys you, too, maybe enough of us hollering might bring a change. ees A reader has asked me for a suggested menu for a June wed- ding shower. She’s hosting a Saturday luncheon and wants something different. The kicker is that she’s working and needs food that isn’t too fiddly to set out but looks outstanding. I suggested a frosted sandwich loaf for the main course — these can and should be made the night before and carefully covered and refrigerated. The whole thing cuts alot better when well chilled. A thin, serrated knife is a must. For dessert, the easiest solution is a bakery shower cake. Another choice is strawberry tarts. These can be purchased or you can make your own fairly easily. For speed, use packaged frozen pastry shells or buy unfill- ed tart shells from a bakery. Frosted Sandwich Loaf This is built on an 8’’ round shepherd’s loaf, Jt serves 12. Hint: cut the completed loaf into 12 neat wedges early in the day. Swirl the ‘‘frosting’’ to disguise the cuts, garnish the sides with chop- ped parsley and return to the refrigerator. Just before setting out, garnish the top. For the bread: Wrap the loaf ina plastic bag and leave it in the fridge until you have the fillings made. This makes the crusts easier to remove. To prepare, remove all the crusts. This will leave you with about 7’’. Cut this bit into four equal horizontal slices. Spread the inner sides lightly with soft butter. Fillings: Chicken: 3 cups diced chicken Y, cup slivered almonds, toasted % cup very finely diced celery Barbara NicGread BUDGET BEATERS 1 tablespoon grated onion (op- tionel) % cup real mayonnaise Salt and pepper to taste Egg: 8 eggs, hard cocked, shelled and mashed (use your potato masher) 4 green onions, finely chopped Ys cup real mayonnaise Salt and pepper to taste Ham: 1 lb. cooked kam, ground (use a food processor — borrow one if you must) V2 cup finely chopped sweet pickles 1 tablespoon grated onion Ya cup real mayonnaise Salt and pepper to taste Mix each filling and fill the bread slices, stacking like you would a layer cake — make sure the filling comes right out to the edges but don’t let any hang over! Frosting: 2 - 8-oz. packages cream cheese Y% cup real mayonnaise % cup milk } tablespoon prepared horseradish Soften the cheese to room temperature. Beat everything until fluffy with an electric beater. Frost the top and sides of the fill- ed loaf. Chill quickly in the fréezer before wrapping — it keeps the frosting where it ought to be. Wrap loosely with lots of plastic wrap. When the whole loaf is well chilled, cut in 12 wedges, repair the frosting and garnish the sides with finely chopped parsley. Re- wrap and store in the refrigerator. For the top: A small bunch of green grapes Black olives with cherry tomatoes (small ones!) ese Do you have a lucky fisherman in your family? Try these: Salmon Pancakes These are not true pancakes as they have no flour but they're crisp, flavorful and make a great dinner along with steamed new potatoes and creamed vegetables (i mix white onions and petit pois). 2 cups cooked salmon, picked over and flaked 1 cup finely chopped onion Y2 cup snipped parsley Ve cup fine cracker crumbs (saltines — unsalled, or try various flavored crackers for a change) Juice of one small lemon t teaspoon dried mixed Italian herbs Salt and pepper 4 eggs, beaten Stir everything together and spoon into a well-oiled frying pan. They spread ,so keep them well spaced. Brown and flip — it only takes a minute or so. These make a great brunch dish or try them between buttered toast slices with sliced tomato. eso Spring Lake Ranch Steak Salad 1 tb. rare grilled steak 8 oz. spinach noodles, cooked ac- cording to directions 1 green pepper cut in 44" strips: 1 16-02. tin pitted black olives, drained and sliced 2 ribs celery, chopped 1 16-0z. can artichoke hearts, drained (cut in half if large) I bunch green onions, chopped 2 tomatoes cut in chunks (Romas are best) 4 oz. grated Parmesan cheese Tcup Italian dressing Romaine lettuce Slice the steak in thin strips.
