isn’t a big item on my shopping list, except

for things like apples (for sausage casserole), and
bananas (to accompany the curry), lemons, of
course. But fruits otherwise represent dessert,

and dessert represents carbohydrates, so mostly I
resist the kiwis and the fresh pineapples whose
flavor I love. And I use the excuse, in the case of
pineapples, that I don’t know how to buy one fit to

eat.

An article in the current
“Food and Wine” magazine
laid out some ground-rules
for people like me abont
tropical fruits generally, so I
threw caution and «the
bathroom scales to the wind
and decided a fruit salad
would be a better com-
panion to the cold ham than

Pineapples, they said,
should be quite yellow all
over, and the leafy crown
dark green and upstanding.
Well, if you grew them in the
back yard you might be able
to achieve those conditions,
but the poor things have to
be packed and shipped and
unpacked and piled for
display, and every crown in
sight looked dejected. There
was indeed a nice yellow
one, though, and the very
base of the crown was still

Thousand Island Pickles
4 quarts sliced cucumbers
4 medium sized onions,
sliced
2 sweet red peppers, cut
into slices
1 green pepper, cut into
strips
3 cups sugar
3 cups vinegar
1 Tbsn dry Mustard
1 Tosa Turmeric
“% cup salt
2 Tbsn Mustard Seed
Combine all ingredients.
Heat to just below the boil-
ing point but do not boil. Fill
hot sterilized jars, leaving ‘1
inch headspace. Seal. Makes
about 7 pints.

Dilled Zucchini Slices
6 pounds zucchini, trimmed
and thinly sliced
2 cups thinly sliced celery
2 large onions, finely
chopped
“ cup salt
ice cubes
2 cups sugar
2 Tbsp. Club House
Dill Seed
2 cups white vinegar
6 cloves garhe, halved

Combine zucchini, celery.
omons and salt in a large
bowl, place a layer of ice on
top. cover bow! and let stand
Jhours. Drain well

House Dill Seed and vinegar
invA saucepan and bring to a
bol starring constantly Stir
in zucchini mixture and heat

several times. Ladie hot zuc-
chink mixture into hot
sterilized jars. Place 1-2
pieces of garlic in cach. Scal
immediately. Makes 6-7
pints,

chance, and scored. Very
juicy, sweet and fragrant.

If you use a plain glass
bowl, your salad looks very
elegant and appetizing if
simply layered, not tossed.
With a base of pineapple
chunks, then layers of fresh
whole strawberries, chunks
of peeled peach and pear,
banana slices sprinkled with
Kirsch to keep them from
discolouring, and a handful
of skinned green grapes
every once in a while you
have a sort of fugue of fruits.
Let each one scoop up a full
variety, then pass the
dressing so as not to cloud
the bowl. -

My dressing was too
sweet, composed as it was of
mayonnaise, lemon juice,
blackberry jelly, seasoned
mustard, ketchup and some
ginger syrup. I think
mayonnaise and = yogurt,
rather, with a little honey,
perhaps, and garlic.

The same article offered
what was to me a revelation
about bananas — they can
be frozen. Only ripe ones, it
says, and only if you plan to
use them cooked, as. in
banana loaves or muffins, or
baked in butter and brown

get away from you, ripening
when you don't want thenm
to — you can retard this
process for a couple of days
by refrigerating them; the
skins will blacken but the
flesh won't, and they'll still
go with peanut-butter.
Papayas and mangoes are
too bland for my jaded
palate, but you might want
to know that the former
should. be as yellow all over
as possible, and without
blemish. (Green, they make
great chutney.) The ten-
derizing enzyme they con-
tain means they can't be
used with gelatine — it just
won't set. Picking the best
mango, which can be many
colours though quite
mature, is just a matter of
gentle pressure as for a ripe
peach. Don't eat their skins.
And coconut meat will

survive months in the
freezer. Open it by baking
for 20 minutes in a

350F(180C) oven, then put it
into a double plastic bag and
whack it with a hammer.
Discard the liquid, it’s
undrinka ble. And a
vegetable peeler will make
quick work of peeling off the
brown skin.
