Next, put in the tomatoes and the basil, oregano, garlic and salt, reserving the Parmesan cheese for the top. Drizzle the olive oil over the top of the pie and you are ready to bake. Baking the pie Bake the pie in a 475°F oven unfil the top is golden. and gooey and the crust is a light golden brown. This should take about 35 or 40 minutes. THE CHICAGO HOT DOG Den’t talk to me about hot dogs in other cities. I have tasted p rotecting children is one of the most important responsibilities of a society. lt must be done in away that supports families - and deciding how best to support families while protecting children involves looking at many of our most fundamental values. W: need your views and ideas, and invite you them. The best ones in the coun- try (New York City, forgive me) are in Chicago. The Windy City does not have many hamburger stands as most cities do ... but it does have 4,000 hot-dog stands and there is a ces- tain style to the way it is to be done. That is more hot-dog stands per capita than any other city in the world! Furthermore, the contest for the best hot dog in town is ever ongoing and the arguments ever-present. One of my favorives is a place called Byron’s on Irving Park. Byron boasts ‘‘Eleven Condiments for Your Hot Dog!" First of all, he starts with all-beef hot dogs. Most Chicago stands do the saaie. Then he offers you the following selection of = >odies to put on the dog. This is Cnicago -tyle! Green sweet bell pepper, diced Yellow onions, diced Mustard, of course Sweet-pickle relish Dill-pickle chips Cucumbers, sliced thin Lettuce, iceberg, shredded Tomatoes, diced Hot pepper (peperoncini) Ketchup, by special request only. (Everyone will stare at you. I think you need a note from your mother.) Celery salt. (This is the clincher. It is a most delicious addition.) I have had parties at my home at which [ served nothing but Chicago hot dogs with all the condiments. People on the West Coast are surprised by such a wonderful meal. Junk food this is not. STEAK IN A HOT PAN I do not know what to call this recipe. It is included here to em- phasize the fact that Chicago is still a centre for fine beef and steak. This is a simple recipe and it will ensure a tender and pro- perly-cooked steak every time. Heat a black frying pan until it is very hot. Rub olive oii, fresh crushed garlic and a bit of saft on a steak. Throw it into the hot pan and sear one side, then the other.
