Two ways, actually, and there isn’t any tofu in either of them. Yogurt, yes, but you can’t tell it’s there. First, a great muffin, even bet- ter than my good old bran stand- by. I got the recipe the day we toured B.C. Sugar’s memory- museum. They have a mass of in- teresting memorabilia on display, plus a video to show where sugar comes from and how it gets into the package. You see it all, you wonder how the stuff has stayed so cheap? A bonus from the visit was a little cookbook, called ‘‘Go With Rogers,’’ natch. Golden syrup, for instance, shows up in a recipe for tomato soup, of all things, again in stir-fried prawns, also a sausage-and-beans cassoulet. The one I'm pushing, here, is called the Hiking Biking Sailing Muffin. It’s loaded with toothsome energy-rousjng things but tastes like something worth seconds. I made a batch one Saturday morning to have for our lunch. We each ate one and had to cancel dinner plans for a chop and vegetable and settle for a bow! of soup, we both felt so completely nourished. Best about 20 minutes, or until the top is firm to your gentle finger. That asterisk up there is to ad- vise you to soak the apricots overnight before you plan to bake — they’re tough otherwise. The other recipe is for brownies, for when you need a lit- tle sweet but don’t want to bulge, too.
