IF WE don’ live in one of
the oddest climates in the
world I’d be surprised. As
I'm writing this the sun is
beating on my typewriter.

Out in the yard, the crocuses are
up, the trees are budding and it’s
snowing. Not that it shouldn’t
snow in March, but it seems
strange to see Makes drifting down
through the bright sun. Mind you,
where else in Canada can you
wander around outside without a
coat, in the middle of winter?

As far as I’m concerned, I’m
sick of heavy, winter meals.
Doesn’t the fresh asparagus look
tempting? Not the price, though.
As soon as it drops to something a
bit more reasonable, I’m buying
seme and then I'll let you know
for sure it’s spring, even if it’s still
snowing!

Tips for Cooking

Fresh Asparagus
* Choose a bunch that has stalks
of uniform size.
* The buds should be tightly closed
and stand up straight.
*Remove any woody-looking
husks from the lower stalks.
* Feel the lower stalks gently,
bending them. Break off the lower
part at the first place the stalk
breaks easily.
* Wash well — grit hides in the
crevices. A sink spray works well.

Until I broke it, my old Pyrex
coffee pot was saved for cooking
asparagus. If you still have one,
fill it half full of water and bring
to a boil. Tie the asparagus in a
bundle with string. Stand the
asparagus, buds up, in the water.
Cover and simmer just until the
Jower stalk pierces easily with a
fork.

Asparagus also microwaves
beautifully. Lay flat on a plate,
add a few drops of water and
cover tightly with plastic wrap
(pierce an air hole in the top).

Cooking time varies with the
amount you're doing so stop the
oven frequently to check for
tenderness.

We like it well buttered and
served with a dusting of grated
Parmesan cheese.

Stir-fried Asparagus,
Chinese Style
1 bunch asparagus
3 tablespoons butter
Ys teaspoon garlic powder
1 tablespoon soy sauce

Prepare asparagus as above. Cut
the stalks, diagonally, into 2”
lengths. Melt the butter in a non-
stick frypan and gently stir-fry the
asparagus until crisp-tender. Add
the soy sauce and garlic powder
and toss well.
