The cook smiled enigmatically when I offered my theory of her marvellous seasoning, so all I had td go on was a six- month old taste-sensation. Calves’ liver seems to have gone the way of free soup bones and [five-cent chocolate bars, but oc- casionally one comes upon “baby beef” which is mild and tender. I dredged it with flour and then cooked it quickly over fairly high heat —jyust 1 the pink-when-cut stage. During this time I seasoned it with salt and and cinnamon, and when both sides were browned I put it on to a warm plate and poured a little red wine into the hot pan and scraped up all the cooked bits and poured this sauce over the liver. It was the kitchen ranger Godley and maybe a dribble of wine while it’s actually cooking. Two “specials” took my eye while 1 was still on the bachelor mode. Avocadoes were being offered at 3 for 389 cents and kiwi fruit for an incredible 39 cents apiece. Examination proved both to be of good quality and both were justi ready to yield to a gentle squeeze, so I carried them home along with five dollars’ worth of fresh crab. My supper that night was crab, avocado and kiwi in a white wine sauce. It was like being at the Ritz. A nice plump ~ other lonely meals. The clay- baker was the vehicle for this one; while it soaked I dned the imside of the chicken and sprinkled in some salt and some thyme.
