Naturally, itis best to make this when the fruits are in season but you can make a very small quantity without blowing your budget. If you are planning to store this it must be processed in a boiling water bath to ensure that it keeps. If, as { did, you cut the ree- ipe down to %, it will keep in the refrigerator for weeks — if it lasts that long. Fruit and Vegetabie Chutney 6 peaches (2) 6 pears (2) 6 ripe tomatoes (2) 3 Spanish onions (1) 3 green peppers (1) 3 tablespoons pickling spice (1) 1 tablespoon salt (4 tbsp.) 4 cups sugar (1%) 2 cups white vinegar (24) Dice vegetables. Tie spices in a bag. Combine all ingredients and boil together 1/4 hours, stirring occasionally. Seal in hot, sterilized jars, leaving 2°’ headspace. Pro- cess in a boiling water bath for 10 minutes. Make sure the water covers the lids by at least 1°’. If you are making a small quantity, the original boiling time can be reduced — cook just until very thick. A reader called to ask me what incredible recipe 1 was using for shortbread that could, "nder any conditions of mis-management, take me two hours. Answer? The one on the side of the box of Canada Cornstarch. The problem started when 1] began to assemble the ingredients. You see, | was in the U.S.A. and using some strange brand of starch. No recipe. So I called home for it. One of my daughter's friends answered the phone and read out the recipe. L don’t know which of us goofed but instead of % cup of butter, | wrote down ’. To make matters worse, I had decided to triple the recipe so 1 was working with quite a quantity. ! mixed up the combination and it looked for all the world like Kit- ty Litter. it was obvious that it needed more butter but how much? Litthe by litte, | added every bit [had on hand. By now it wus nearly nine o'clock at night and I was in an ugly mood. Brian kindly volunteered to zo out and buy more. He deserved a medal — it was pitch dark and in the midst of a howling rainstorm. See, two hours doesn't seem so long when you consider the situa- tion. Anyway, the cookies even- tually turned out quite well — I topped half of them with the tradi- tional red cherries and the cest with whole pecan halves. The pecan ones are the nicest.
