C6 - Wednesday, July 25, 1984 - North Shore News BUDGET BEATING PRICES _ Get a deal on veal for Cannelloni S A SPECIAL treat for my family I agreed to make homemade Cannelloni for Sunday dinner. It really blasted my budget to pay $3.98 a pound for ground veal at the nearest meat market. This week Ill be visiting Buy Low - they’re featuring veal shoulder steak for $1.58 a pound and my food processor will make short work of grinding it! if your family likes Italian food, they’ll like this. CANNELLONI For the pasta squares, visit your mearest fresh pasta outlet and buy seven lasagne noodles. Cut each noodle in- to three 4’’ squares. Cook ac- cording to directions. Filling: First, prepare 2 cups medium white sauce: (4 tablespeons each flour and butter, 2 cups milk, dash of salt) 2 pounds ground veal 1 package frozen chopped spinach 1 onion, | carrot, 1 mb celery 2 cloves garlic 1% cups grated parmesan cheese 2 eggs Pinch of nutmeg, fresh cracked pepper to taste. Gently saute the veal in a frying pan with a dab of but- ter. When it turns white, remove to a bowl. Cook the spinach and drain (squeeze!) Super Valu ts the place to buy Cross Rib roasts this week - $1.89 a pound (bone in). If 1’m having a crowd I cook one of these the night before using lots of seasoned pepper on the outside. Well chilled, it’s easy to slice very thin and it’s great with a budget beaters well. Grind the spinach or toss in your food processor and add to meat. Grind the carrot, onion, celery and garlic and saute until soft with a dab of but- ter. Send it to join the meat ‘and spinach. Lightly beat the eggs and toss them in too. Finally, add half the Parmesan cheese, % cup of the white sauce and the seasonings. Put a couple of tables- poons of filling on each pasta square and roll up. Use your biggest oblong baking dish and butter it well. Spread about “% cup of the white sauce on the bottom. Ar- range the rolls side by side, seam-side down on the dish. Top with the rest of the white sauce and the grated Parmesan. Bake at 350° for half an hour. Serve with a tossed green salad and garlic bread. Serves 5 with one ex- tra Cannelloni for Dad. While you're at Buy Low, pick up some seedless green grapes (67¢€ a pound) and nectarines (53¢ Ib.) for dessert. CAR POOLS the classified listings if you need a nde by Barbara McCreadie salad buffet. Scallops at $4.59 a pound and shrimp at $4.89 at Super Valu are a good choice to add to your buffet. Try stuffing medium-sized tomatoes with the shrimp mixed with a bit of real mayonnaise. The scallops, cooked only a minute or two in white wine (add a bay leaf and a pinch of Italian herbs) looks delicious in cucumber baskets. Cut an English cucumber in 1% inch slices. Saute a couple of green peppers (and a red one if they’re fairly cheap) in about “% cup but- ter. Add a good sprinkle of garlic powder. Combine with the sausage, a handful of chopped parsley and serve over spaghetti with lots of grated Parmesan. Libby’s tomato $1.35 for 48-oz. tins at Woodward’s this week - anyone out there planning on making lots of Bloody Marys? Remember, it’s han- dy to have on hand for mak- ing BBQ sauce and jelhed vegetable salads. if you’re planning on entertaining, look for Coke or Sprite (750 ml) for 67¢ and WW brand potato chips (200 juice 1s Fro Su 10-8 gm) at 87¢ at Woodward’s. Your kids will love you. Have you tried ‘‘apple pears’’? Absolutely delicious - just ask my kids! Safeway has them for the lowest price I’ve seen - 69¢ a pound. It is rumored that they keep beautifully but none have ever lasted in our house for more than a day! We call them ‘‘crystal pears’? which describes them perfectly. Limes are just 10¢ each at’ Safeway and it’s also the best place to buy all varieties of fancy lettuce - 39¢ a head. Cabbage is just 16¢ a pound. Stock vu,» on pork loin chops at $1.88 a pound at IGA. For a ‘‘dinner in a dish’’, flour and brown 5 chops (or one more or less).
