First, it was a big treat for Brian and me — my friend Shirley Louie invited us over to celebrate Chinese New Year and the food was past any of the usual adjectives — I need a teen-kid to put it right for me but they’re all out — Try Mega marvellous! amazing how many servings you can get out of the smallest ham? My kids hate it as leftovers (Brian even hates it first time round) un- til } dipped into Shirley's book and tried: budget beaters Shirley did an appetizer salad that we can all duplicate but who would ever chink of it? Shirley Louie, of course. She told me that she dreamed it up just before- we all arrived and | guarantee it SHIRLEY LOUIE'S SEAFOOD SALAD _ Baskets:. Won Ton Skins (Find them- frozen in the supermarket) Thaw the skins, For each serving, use 2 skins, set at angles.to each other — 8 points. Shape them over a soup. ladle :and jower into’ « deep fat at 375F. Keep them under until brown and crisp. : Drain on paper towels and : take care you don’t crack the ? baskets. * Salad: Shirley. used shrimp. . crab, water chestnuts and ‘ bean’ sprouts. Dressing: This made enough for 14 salads in baskets. Marinate the salad in the dressing but don’t turn out into the baskets until ready fo serve. 2°’ fresh ginger, peeled and grated 3 cloves garlic, peeled Y cup parsley 1 tbsp. Dijon mustard 2 tbsp. honey salt and pepper Y cup wine vinegar % cup vegetable oil Buzz in blender or F.P. until smooth. If that salad doesn’t grab your guests, | quit! I made another of Shirley’s recipes last week. 1 have a helluva time getting rid of left-over ham.
