Proprietor Michael Kilby (standing) joins (seated left to right) sous chef Stuart irving, day manager Vaierie Beamish and chef Steve McKinley in the dining room of his new Edgemont Village restau- rant. - Save room for sweets Fi rom page 28 $20) is far from ambitious, bur the dishes offered hit all the right West Coast buttons. They range from Lumache pasta with Roasted Leg of Lamb to Broiled Halibur Filer, Kilby’s California Lamb and Pan Roasted Chicken Breast. Add to the above nightly specials that included a mar- vellous Arctic Char on a recent Friday night. A filet of the north country salmonid was served curled over a pyramid of white Basmati rice and accompanied with a colorful selection of Indian-style smoked salmon, grilled parsnip spears and red peppers and sauteed bok choy. Asampled Beef Tenderloin came nesded in a linguine of fresh Manila clams and chopped tomatoes. Unfortunately, the tender- loin was delivered medium well, rather than the reauested medium rare. Apart from that quibble, however, it was an entree well worth sampling. Killy’s wine list ($17 to $50) offers a reasonable selec- tion of bottles primarily from Australia, Canada, the United States, France and Italy. A half dozen ($4 to $8) are offered by the glass. Desserts (around $5), as mentioned, are well worth sav- ing digestive space for. Table Hopping recommends Kilby’s Cheesecake Stack. It dispatches the dull tradi- tional wedge of modified cream cheese served on overly sweet graham cracker crust or gingerbread bottom in favor of a round of mascarpone- based cheesecake berween del- icate shingles of crisp sweet philo pastry. The stack comes topped with a compote of plums and sundried cherries and a subtle rosehip syrup. A sweet that avoids over- whelming diners with calories and sugar. Chocolate Oblivion, mean- while, mines the now manda- tory dense chocolate end of “he dessert zone and Coconut Cream Pie will ably satisfy the resilient forces of the tradition- al pie hound. The loss of Caje Norte was mourned by many, but its replacement has added renewed local spirit to Edgemont Village. Coupled with the excellent Village Bistro across the street, Kilby’s delivers a winning one- two Edgemont Village punch that does the neighborhood proud.
