Entree prices that range from $13 to $20 are likewise difficult to improve upon. Especially when those entrees include such dishes as Cog au Vin, Medallions of Venison, Pan Fried Halibut with fruit chutney and Chicken Cordon Bleu. Chef Page’s wine list is as unadorned as the rest of his dining experience. Bortles go for between $28 and $60 and originate in France, Italy, Chile, B.C. and Australia. There are also four by the glass ($5.75). Meals reward diners with good dollar value. Solid. Erench cookery at a reason- “able price. A sampled Bouillabaisse, for example, defivered a deep bow! of clams, mussels, East Coast swimming scallops, halibut, salmon, snapper and prawns ina complex savoury broth. The Lamb Rack was served with roasted potatoes and a melange of vegetables — green beans and a saute of julienne carrots, celery and turnip. Add in a dollop of Poupon mustard and a rich au jus; combine with a glass of Bourgogne and, voila: le diner francais formidable. Desserts are worth sani- pling. Organic Peach Melba if you're lucky; creme caramel if you're traditional; profite- role if you're smart. Cordon Bleu, which also doubles as a catering service, has brought an outpost of quality dining to an area with far different traditions.
