vegetable brush and cook it
in the microwave on a flat
plate, covered with plastic

The tough, woody ends
must .be removed before
cooking — bend the stem at
the bottom and it will snap
off where .the tough part
ends. Don’t overcook — you
lose the lovely green color
and the stalks toughen.

until crisp-tender. Combine
the broth and soy sauce.
Add noodles to vegetables
and pour broth over. Stir
well, cover’ and cook 5
minutes. Uncover and stir
until any liquid remaining
evaporates. If the noodles
seem a bit dry, add a bit
more broth or boiling water.
Taste test for seasoning —
you may (like me!) like a bit
more soy sauce. ‘

Garnish with the green
onion. If you like you can
turn this into Chicken Chow
Mein by adding. sliced
chicken on top. (or shrimp
or crabmeat or —).

This serves ‘& asa side
dish.
