THINKING SLIM Add variety but no pounds The old cast-iron skillet and a tub of lard or bacon grease used to be a mainstay of rural American cooking. Meat, potatoes, vegetables, whatever could be fried up quickly and inexpensively was added to the frying pan. What couldn't be fried on the stove-top was baked or roasted in the oven, or, on occasion, boiled, and that was about as far as cooking methods went. Nowadays, however, we have many more cooking options available, from broiling and barbecuing to slow-cooking and = micro- wave cuisine. And _= since concem about calones and cholesterol has eliminated the frying skillet from many households, these alter- native techniques have taken on new importance. Yet how many of us have simply switched from one limited cooking repertoire to another, without really exploring the full range of possibilities? There are a good many easy-to-learn techniques that can add variety to your diet without adding pounds to your waist- line. Below are just a few: STIR-FRYING OR SAUTEEING: Widely used in the Orient, this method of quick-cooking bits of food in a small amount of hot fat (for our purposes, vegetable oil) is related to the old skillet frying, but much easier on the waisthne, allowing the subule flavor of foods to come through. Using this method, juhenne strips of vegetables can be cooked to a tender- crisp state in minutes, and meat, poultry and fish can be “seared” in a crisp outer coat that seals in juices. If you have yet to discover this intriguing, remarkably simple technique, you have a treat in store. POACHING: Most of us have tried poaching eggs, but did you know that you can also poach (simmer in a small amount of liquid) foods such as fish and fresh fruit? The liquid need not be limited to water, either. Wine, fruit juice, bouillon, beer or milk are only a few poaching alternatives. Poaching is an advantage, too, for the busy cook, since there is no sticky cookware to clean afterwards. STEAMING. Foods are steamed by suspending them, usually in a metal bas- ket or colander, over boiling water. Unlike boiling, steaming does not plunge the food directly into the water, but instead allows the steam to do the cooking, thus preserving essential nutnents. Since, like poaching, steaming involves no added fat, it does not add any calories to food. And foods that are steamed rather than boiled tend to preserve their crisp texture and flavor without becoming Lmp or soggy in cooking.
