Louis Erregaible’s
Oilaskua Rilar Biribilian
(Chicken with peas) -
3-% Ib. chicken pieces. - ~
1 large onfon, sliced thin ©
4 oz. lean bacon, diced
2 large bell peppers, sliced
2 Ib. sweet peas (frozen;: feesh ‘cr |
canned)
1 clove of garlic, minced
1 sprig parsley, chopped

‘3 tablespoons olive oil

salt and pepper

Brown chicken in deep frying
pan with olive oil. Remove and set
aside. Combine peppers, . onion,
bacon, parsley and garlic and saute
lightly. in the juices. Add browned
chicken, cover and cook over slow
heat for 30 minutes or until
chicken ‘is done. Stir occasionally
to prevent burning and,:sticking. |
Salt and pepper to taste. : .

Add’ sweet ' peas. and “gook

together. for the last five minutes.
