1 medium onion, finely chopped

2 terjspoons mixed dried

italian herbs

2 tablespoons butter

Ya cup fine dry breadcrumbs

2 tablespoons grated Parmesan
cheese

Prepare peppers by cutting off
tops and removing seeds and
membranes. Blanch five minutes in
a big potful of boiling water. Cook

meat gently until grey.

Add onions and gently cook un-
til limp. Add rice and Statian
herbs,

Divide the mixture and stuff the
peppers and set side-by-side in a
buttered baking dish — they ll
prop cach other up.

Melt butter, add crumbs and
Parmesan and sprinkle the topping
over the peppers. Bake at 325°F,
35. minutes. Serve with tomato
sauce.
