The calorie content of cach of these three offerings is less than 350 calories per serving and their preparation time is about one hour. In recent weeks, one of the major supermarket chains started featuring smoked pork hocks at a reasonable price. Our first soup uses this tasty product as a base for its stock. Potato Soup with Smoked Hock 24% litres cold water 1 kg smoked pork hock pieces (sclect the meaty ones) 75g medium diced celery 75g mediurn «iced carrots 75g mediuta -liced parsnips 75g medium diced onions 200g medium diced peeled potatoes 100 mL 7 % sour cream 15 mL all-purpose flour 15 mL paprika the juice of one half lemon 50 mL freshly chopped parsley 30 mL canola oil 2 large garlic cloves, crushed 5 mL sugar 2 mL crushed peppercorns Sclect a large soup pot. Simmer the pork hocks in the water for 2 to 24% hours. Add extra water if there is evaporation. Do not add salt — the hocks are usually salty enough. Cool this stock overnight. Once cold, remove fat from the top and the hocks from the stock. Take off all the meat from the hocks and cut into medi- um dice. The rest of the hock maybe discarded. Saute the vegetables in the oi! until the onions are glossy. In a small bow! whisk together 500 mL of the cold stock, sour cream, flour, paprika and lemon juice. This is our thickener. Add the diced meat pieces and potatoes to the onions, saute 2 to 3 minutes. Pour in the cold stock, about 1¥ litres. Simmer for 10 minutes. Add the sugar and pepper. Add the 560 mL stock mixture. Stir in well. Simmer 10 more minutes. Check for flavor and the doneness of the vegetables, Serve in a nice tureen with rye bread or warm dinner roll. Approximate preparation time is 1 hour. (Plus cooking and cooling the stock.) . Calorie count per serving: about 340 calories. Enjoy!
