Barbecued fish is low in fat

of lemon juice or white wine
and herbs and brush lightly
over the fish fillets as they
are barbecued. If fat content
is not a concern, use a table-
spoon of butter, plus an
equal amount of wine or
lemon juice. Grill over high
heat until just cooked
through, Don’t overcook,

Serve with ree, pasta or
potatoes and a simple salad.
