FOOD Kitchen conundrum When one cooks and the other doesn't AS YOU read this, my oldest daughter, Lori, and 1 are scheduled to be deep in the heart of Maui. Brian is on his own with a carload of TV dinners, five cats and a cup- board full of cat food. 1 don’t want to hear another word about husband neglect. The truth is that some men cook and others don't. I tried, and I've got witnesses, to teach Brian the rudiments of the kitchen but he was uninterested. As for washing machines, he knows even less — my guess is that he'll either phone one of the other daughters to help or will head for the Nearest store and buy some more shirts and BVD’s. e* * Men like to cook (except Brian) and this is a neat, easy way to share part of the chore of daily living. I’ve noticed, too, that men seem to develop their own specialties and can invariably be counted on when it comes to potluck dinners. Caesar Salad is a great male standby. This bean casserole is a great favorite with men, both cooks and diners. It’s easy and quick to make, can be kept warm in- definitely and the recipe can be increased to feed the army if need be. (I’ve made it for 450 people!) For a man preparing a party menu on his own, this teams well with a big ham (buy pre-cooked, either boneless or bone-in) heated along with the beans. Then prepare a big potato salad (recipe follows) and pick up a couple of pounds of coleslaw at your favorite deli. While you’re there, buy crusty buns and pastries. Barbecued Mixed Beans This recipe is enough for about six people, providing it is served with the ham, salads and rolls. It freezes well and re-heats from the refrigerator beautifully. Allow a long time to re-heat — keep the oven temperature low. 1 28 oz. tin kidney beans, drained 1 28 oz. tin Boston baked beans, undrained 1 14 oz. tin green lima beans, drained llarge onion, “ cup butter % cup brown sugar 2 tsp. garlic granules % cup ketchup 2 tablespoons vinegar 1 tablespoon Worcestershire sauce If you have a real old-fashioned bean pot, use it. Otherwise, a deep casserole dish with a lid will do. Turn beans into dish and mix. Saute the onion gently in butter — do not brown. Add the remaining indredients and stir until heated and well mixed. Stir sauce into bean mixture. Bake, covered, at least an hour at 300 F but you can lower the heat and keep them hot. Do not omit the fima beans — they add color and make the cas- serole very attractive to serve. aa finely diced Basic Potato salad This recipe is done on a “per serving basis.°° Do NOT add inayonnaise until the rest of the ingredients are well chilled — this is best done just before serving. Keep the mixture cold at all times — set the bowl in a bed of ice if the weather is hat. Anyone who uses Miracle Whip in place of mayonnaise ought to be shor! t medium potato, peeled, split, cooked and diced 1 egg, hard cooked, shelled and diced 1 big green onion, chopped '‘% rib celery, chopped farbara NecCreadie BUDGET BEATERS dusting of seasoned salt grating freshly cracked pepper Mayonnaise — about a heaping tablespoonful but add_ bit-by-bit (some potatoes are dryer than others) Combine the separately chilled ingredients. If making a large quantity, 10 times this recipe will serve 10-12 For more people, cut back, ad- ding one of the aove proportions for every two peorie. Garnishes: Any or all of these make the bowl at:ractive and add flavor to the salad: hard-cooked egg w :dges snipped parsley black or green olives whole cherry tomatoes ss My friend Sven makes guacamole for every party. See what I mean about specialties? This is his version, just as he wrote it out for me. Please note that the original is pretty strong stuff and you can omit one lime if you omit the Carta Blanca beer. Sven's Guacamole Delight 4 ripe avocados 5 Romano tomatoes (diced) 1 medium white onion (diced)* 3% cloves garlic (pressed)* 2 large limes** } tsp. Heinz Worcestershire sauce 1 tbsp. (50 droplets) tabasco sauce 6 pack Mexican beer — Carta Blanca (chilied) After shopping for above in- gredients slice one of the limes in- to six equal wedges. Unwind by opening first beer and pressing a wedge of lime through the top of the bottle. Using a sharp eight inch chef’s knife, halve the avocados and scoop contents out into a medium cooking bowl. idash mixture by pressing through tines of fork until an even paste has been reached. Dice up tomatoes and add to mixture. Slice and dice up onion and blend in. Open second beer (c/w lime) to wash away tears. Press in the garlic and the juice of remaining single lime. Mix thoroughly. Add Worcestershire and tabasco sauce, and taste. Open third beer to ap- pease the tongue. Cover dip with Saran wrap and place in fridge to thicken mixture. Use remaining two wedges of lime with beer to enjoy the taste of the Guacamole Delight. Serves 6-8. “(This quantity of onion and garlic is a bit too much for my taste.
