It’s a time-honored North Vancouver tradition. Ripp’s Diner is, of course, the original North Shore “Garden of Eatin’.” That morsel of kitchen wit and a menu of short-order Canadian cookery priced on the low side of cheap has kept Ripp’s roiling since it was founded in 1961 by the orig- inal Ripper, Dave Ristich. The Lonsdale diner has gone throuth assorted hands since then, the most recent pair of which belong to Matthew and Vivian Kirn. The Korean couple have kept the flame simmering on the basic Ripp’s Canadian cuisine. But in October the Kims imported the ser- vices of Chef Pak Jung, formerly’ of Edgemont Village’s Cufe Boulevard, and launched an evening Korean barbecue at Ripp’s. A laudable move, but a tough sell. For so strong is the Ripp’s Canadian kitchen character that dining fare more exotic than fries and grilled cheese sandwiches just does not seem appropriate to con- sume in the venerable cafe’s diner booths.
