Burger & Sons was rechristened P.J.’s Allstar Cafe. The name change does not mean the restaurant's original raison d'etre has been moved to distant back sections of kitchen grills — the hamburger menu has recently been increased by a “%-dozen selec- tions — but it does mean a brighter light will be shed on the other side of the restaurant’s menu. Burger & Sons, always an astute lot, took careful note of the receding tide of hamburgermania and decided to give Phineas James Burger, the restaurant’s mascot, his walking papers. The redneck, red meat cut-up, who first muscled his way into the fast food frontier in 1979 and turned it upside-down with the first P.J.’s, was deemed to be way past his prime. He was also cramping the style of the five-link P.J. chain. Says P.J.’s John Harper: ‘‘We knew from our surveys that 50 per cent of the people who came into our restaurants ordered something other than hamburgers.
