The dish was an agreeable vegetarian marriage of land and sea: greens from both sides of the high tide mark. It included shredded red cab- bage, lettuce and watercress from above that mark and a brown and deep green seaweed from the below, There were also thin lemon and cucumber slices atop rice noodles in a sweet and sour vinaigrette, somewhat like a Sunomono salad. It was an interesting and exotic combination of contrasts and fla- vors: crisp lettuce and sharp pep- pery watercress with slippery seaweed and noodles. From seaweed, | progressed to Baked Geoduck ($4.25), another new Manyo offering. It was presented in an abalone shell garnished with fancy lettuce and shredded red cabbage. The geoduck (King or Giant Clam to West Coasters) was prepared in a Japanese Florentine style: a sweet cream sauce with fried onions and spinach. In the main event, | went for the Beef Sashimi ($9.75). The dish is sushi Prairies-style, and it is ideal for the reluctant fish-food fan. Red meat takes the place of seafood, but the dish is all Japa- nese, retaining the simple brilliance of presentation that is so much a part of Japanese gastronomy. Preparation is subtle but fastidi- ous: thin slices of raw beef, lightly seared, are served in a soya- teriyaki marinade beneath ginger root, garlic, chopped green onions and ground white radishes. The flavors are sharp and brac- ing; the meat is tender and juicy. Highly recommended.
