You can spoon a lump of sour cream or yogurt on top as you serve it, or you can throw in a handful of croutons, or you can float a couple of very thin slices of lemon, or of cucumber, and let people know you've been around. The same method, using two or three stalks of celery and their leaves, produces a fine soup; or you can use spinach, lettuce with a fistful of parsley, and try out a favourite herb.
