BALBOA’S BAR AND GRILL, THE GRANVILLE ISLAND HOTEL, 1253 JOHNSTON STREET, GRANVILLE ISLAND, VANCOUVER, 683-7373 Named by new Granville Island Hotel owners, Emil and Raoul Malak, after Balboa Island just off California’s Newport Beach, this refurbished 80-seat restaurant opened in mid-August to ‘‘slice of Southern California’ choruses ballyhooed by admen and pro- moters. Balboa’s remake is the first in a three-phase overhaul of the 54- room hotel and marina that is bet- ter known to those with winter tans and $50-haircuts as the “bay of pigs’’, a term with little attrac- tion for those not in the know. The restaurant's new interior was designed by original hotel in- terior designer Lee Loveland; its menu design is courtesy of head hotel chef Peter Scott. Formerly of the Saramouche in Toronto, Scott is promising fresh — an oft used but oft abused culi- nary adjective —- as the key to menu philosophy.
