Test for ‘done- ness’ with a skewer. Remove and let stand. Preheat oven to 425°F, grease an 8°x8" baking dish. When cabbage coo! enough to handle, cut an open- ing approx. 3” deep and 4” in diameter in the top, leaving base intact. Chop some of the removed center and reserve it. Melt butter in large frying pan. Add chopped onion, chopped cabbage, rice, salt, and pepper. Saute until lightly browned. Remove from heat, stir in ched- dar cheese and put into the opening in the cabbage. (The dish may be prepared ahead to this poiat.) Place cabbage in prepared baking dish and pour tomato sauce over it. Sprinkle with Parmesan and bake for 15 min, To serve, place on serving dish, slice into wedges and gar- nish with parsley.
