Thrifty cooks depend on pork shoulder steaks and appreciative diners look forward to the delicious flavor. Shoulder steaks are the largest sized pork chops on the market and the least expensive. They can be cooked in any way that you choose. They're cut from the shoulder or butt of the animal. On animals such as beef the shoulder is a tough cut and requires tong, slow cooking with moist heat. With pork this is not necessary. All cuts of pork are tender and may be cooked by any of your favorite methods. On oc- casion you may find picnic shoulder chops on the meat counter. These are cut from the lower part of the shoulder or picnic. Remember — pork is an excellent source of the B vitamins thiamine = and niacine and it’s a good source of phosphorus and iron. Even for a reducing diet be sure to include pork. Lean pork or pork with the fat trimmed off is not high in calories and it is a first class protein, a very important part of any diet. AKE A MEAL Use the shoulder (of pork) Shoulder steaks make an excellent meat for Chinese stir-fry dishes. Cut them into thin strips for quick cooking. Barbecue pork steaks with a little barbecue sauce, bake them in a casserole or try them in some of the delicious recipes that follow. We know that you'll enjoy tasty, nutritious pork steaks. ANNIE’S PORK STEW 1'A Ib. pork shoulder, cubed 1 tablespoon oil 1 large onion, shced 1 clove garlic, finely chopped 1-28 oz. can sauerkraut pinch of pepper | tablespoon sugar 2 tsps chopped parsley 1 tsp. caraway seeds ‘4 tsp. thyme ‘4 tsp. powdered dill 2 cups water Brown meat in oul in heavy skillet. Push aside in pan. Saute onion and garlic over low heat 10 to 15 minutes or until onion is tender. Stir in sauerkraut, sugar, parsley, caraway seeds, thyme, dill, pepper and water. Cover tightly. Bring to a_ boil. PORK SHOULDER Reduce heat and simmer | hour or until meat is tender. Garnish with tomato wedges and green pepper rings. Replace lid and cook 5 minutes more to soften tomatoes and hear peppers. SAVORY PORK CHOP SUPPER 4 shoulder chops (4 inch thick) 1 - 10 0z. (284 ml) tin STEAKS condensed onion soup 1 cup water 2 tsp.
