Pistachio nuts are a

tasty, hea

THESE exotic little
green nuts have a won-
derful history.

They originated in the
Middle East, where they grew
wild in che high desert
regions. Legend has it that
lovers met beneath the trees
to hear the pistachios crack
open on moonlit nights for
the promise of yood fortune.
Even today that part of the
world is a major producer of
pistachios. In fact, Iran is the
world’s largest producer, fol-
lowed by the U.S.

In ancient times, pistachios
were a rare delicacy; they were
the favourite of the Queen of
Sheba, who hoarded the
Assyrian harvest for herself

importing the
nuts in the
1880s for con-
sumers of
Middle Eastern
origin. In 50
years the pista-
chios became a
popular snack
food, eventually
introduced and market-
ed in vending machines.

It was azound this
time when a New Jersey
importer decided to dve
the nuts red, to cover the
staining caused by the har-
vesting techniques of the
Middle East.

Of course the original
colour of the pistachio shell is
light and creamy.

In 1976 the first California
pistachio crop was harvested.
Today 90,000 acres are under
cultivation.

We in B.C. purchase most.
of our pistachios from
California; in 1999
$1,038, 858 worth.

“The little green nut is a
tasty contribution to a healthy
diet. As with other nuts, the
fat contained in them is large-
ly monounsaturated, or

“good” fat. [f you are count-
ing calories, 50 pistachio nuts
contain 170 calories. They
also provide dietary fibre, pro-
tein, carbohydrates, calcium,
phosphorus, potassium and
iron.

There are many ways we
can utilize pistachios. Ground.
pistachios can be used to coat
meat and fish fillets. We may
also substitute pistachios for
any other nut when baking
cakes, cookies or muffins.

pizza, and a stir-fried dish.

Pistachio Cornmeal
Crust

2% c. all-purpose flour

1 package fast rising yeast
2 tsp. granulated sugar

1 esp. salt

1% c. hot water

2 Tbsp. olive oil

X ¢. yellow cornmeal

¥% c. chopped pistachio nuts

Method: Select two 12”
pizza pans. Combine 1 c.
flour, yeast, sugar, and salt.
Pour the flour and oil in
blender and add the flour-
yeast mixture. Blend at medi-
um speed for 15 seconds.
Pour the mass into a large
bowl. Add in the remaining
1c. flour, corn meal and the
