Here’s a hearty idea for
lamb stew, with that special
Greek touch!

3 Ibs. cubed shoulder of lamb

'% cup salad oil or olive oil

3 medium onions, sliced

2 (8 oz.) cans tomato sauce

“ cup water

1 tsp salt

2 tsp marjoram

‘4 tsp pepper

1 small eggplant, cubed

1 large green pepper, diced

¥% Ib. okra or green beans.

3 medium tomatoes, cut ir
wedges

12 oz. elbow macaroni
Brown lamb in oil in Dutch

oven; drain fat. Add onion to

lamb; saute 5 minutes. Stir in

tomato sauce, water, salt,

marjoram and pepper.

Simmer covered 4S
minutes. Add eggplant.
green pepper, okra; simmer
30 minutes or until lamb and
vegetable are tender. Add
tomatoes; cook 5 minutes.

Meanwhile cook macaroni
in boiling salted’ water.
Drain. Serve stew over
macaroni. Makes 6 servings.

Suggested dinner menu:

Greek lamb stew; cucum-
ber, radish, and avacado
salad with iemon-oregano
dressing; and crusty rolls.

For dessert: fresh fruit and
cheese. Try to find the Greek
cheeses, Kaseri and Kefalo-
teri, if possible. If not, serve
Cheddar and other favorites.
