service out of the main dining
room. Jangling telephones and
service folk rattling off acidresses,
pizza toppings and estimated
times of pizza delivery arrivals is
most distracting for in-house din-
ers, whe feel more like audience
members in a pizza waiting
room than patrons of a restau-
rant.

*Jettison the mid-’60s dining-
room furniture.

up from that of ersatz urban rap-
pers.

the restaurant’s open kitchen, so
that patrons can observe produc-
tivity and expertise’ rather than
confusion and exasperation.

Adhering to the above would
add to what has become a good
basic Colosseum core.

Our pizzas, for example, were
both very good. Their crusts were
thick, with crisp exteriors and
fine soft interiors. The Siciliana
was topped with artichoke
hearts, proscuitto, anchovies,
fresh oregano and parmesan
cheese; the Pesto came with
pesto sauce, red and green pep-
pers, Teta cheese and roasted! gar-
ic.

Good imaginative combina-
tions both.

The restaurant offers a simple
wine list ($18 to $30) with some
interesting bottles from Chile,
Europe, New Zealand and
California.

And the Milcaks hope to add
live jazz to the Colosseum’s
Friday and Saturday night menus.

So while it remains somewhat
in transitional ruins, the
Colosseum appears headed for
real culinary resurrection. Pizza
gladiators rejoice.
