Remember Joeck? (He's
Dutch, so you say ‘‘Yook’’).
I wrote about him last Feb-
ruary, from:his bakery loft
on First Street, where he was
mixing and baking and
trimming and filling thou-
sands of Dutch Wafers
everyday, and every bit of it
by hand. Do you remember?
And | told you about the
tons of crumbs thai resulted
from the trimming, and how
he had great stores of them.

He gave them to the Food
Bank, he gave them to peo-
ple for bird-food, he stored
them in great plastic con-
tainers up to the ceiling, and
then suddenly one day he
used some for crust for a
cheesecake, and the light
broke out.

So then he began to
package them, and when my
friend saw them she said,
“Ah, RUM BALLS",
because that recipe calls for
cight cups of vanilla wafer
crumbs, remember? And
these crumbs are perfect for
that — my friend processed
hers, in her food machine,
but I used mine as is and all
they do is add a bit of inter-
