Pancake mix and chicken

Pancake mixes are usually
used for making pancakes.
What many people do not
know is that they can also be
used in other recipes of very
diverse nature.

CHICKEN SALAD-CREPE
PARTNERS
Filling:
3 c. chopped cooked
chicken
Ys c. stuffed green
olive slices
vs c. chopped sweet
pickle
“a c. mayonnaise
1 tbs. finely chopped onion
| tsp. prepared mustard
Vs tsp. salt

Crepes:
2 eggs, beaten
1c. milk
1 c. pancake mix
‘4 tsp. paprika

For filling, combine
chicken, celery, olives and
pickles. Mix together
mayonnaise, onion,
and salt.

Add to chicken
mixture; toss to combine.
Cover; refrigerate several

hours or overnight.

For crepes, combine eggs
and milk. Add pancake mix
and paprika: beat until
smooth. For each crepe,
lightly butter 8-inch skillet or

crepe pan;
medium heat until butter
bubbles. Pour in about 1
tablespoon batter; im-
mediately tilt pan to coat
bottom evenly with thin
layer. Cook underside until
delicately browned. turn;
cook on other side. Stack on
plate; cover with plastic
wrap until ready to use. To
serve, fill crepes with
chicken salad. To fill crepes,
place about 2 tablespoons of
the filling down the centre of
each crepe. Fold over one
side, and then the other.
Garnish with mayonnaise
and paprika, if desired.
