Specially imported from Italy, the igloo-shaped brick oven cooks at extremely high temperatures; foods prepared in it require no cooking oils. The forno is heated overnight with natural gas to a temperature of 400°F, but cooks with small quantities of wood at temperatures of up to 550°F. The wood imparts subtle flavors to forno food, which, because of the high oven temperatures, is cooked extremely quickly (veal roasts are done in about seven minutes). Eari’s Tin Palace will be prepar- ing veal, chicken, mixed grills and more in the forno. If the forno fires catch on at the Tin Palace, forno ovens will be in- stalled in other links in the Earl’s chain.
