The original was so poorly designed that cooking a meal was a challenge. Worse, it had continual cross-traffic with everyone using the kitchen as a shortcut to the tamily room at the rear of the house. We tore the whole thing out, Te-positioned the doors and put together a kitchen that really works. But I made one big mistake and Spent 10 years paying for it. In- stead of buying top-line stove top and oven, I economized and bought utility models. budget beaters Barbara McCreadie The burner coils never cooked evenly and the oven quickly became a disaster. The door began to sag and no amount of repair ever fixed it. The temperature varied from corner to corner and the self-clean feature was next to useless. They're gone! I’m the proud owner of new Hotpoint units that sit straight and cook properly. We even went all-out and bought a new fan and at least I can install a 60-wait bulb instead of a 25 and see what I'm doing. One drawback, though. After years of dealing with appliances that were quirky, I’m having to learn to cook all over again — my tipping and balancing act just doesn’t work any more. Just to test the oven, 1 dug out my old favorite chocolate cake rec- ipe. Unfortunately, my efficient new oven cooks faster and I dried out the cake. For anyone who’s out of the habit of baking scratch cakes, here's my old recipe for chocolate cake. Double Chocolate Delight 2 cups sifted cake flour (you can use all-purpose flour but the cake won't be as tender. Reduce quanti- ty by 2 tablespoons) 1 teaspoon salt Y2 cup shortening (Crisco) 1% cups sugar 2 epgs Y: cup cocoa (dry, unsweetened) 1 cup hot coffee (brewed or in- stant) 1 teaspoon baking soda 2 cup boiling water Combine flour and salt and set aside. Beat shortening with sugar until well biended — it will look like snow, Add eggs and beat very well — it should look fike whipped cream and not feel grainy. Dissolve cocoa in the hot coffee and add, beating well. Add flour mixture gradually, beating well. Dissolve soda in boiling water and add.
