On a recent visit, however, 1 opted for a tour around the famed Marco Polo smorgasbord. The tour began nicely with special smorgasbord appetizers, hand-cooked by the attending waiter. A plate of fried pork ribs was accompanied with a side pot of ex- cellent’ dragon-breathing mustard sauce and a more neighborly plum sauce. Fried shrimp with bacon strip jackets rounded out the hors d’oeuvres. Both dishes were good. The smorgasbord !ayout itself looked more an afterthought than a Marco Polo trademark. Two portable trolleys offered a cross- section of stereotypical Cantonese fare: egg rolls, deep-fried chicken wings, chicken chop suey, chow mein and sweet and sour pork. New addition to the smorgasbord since the Marco Polo's '50s and ‘60s heydays is a small salad bar selection that in- cludes macaroni, potato and bean salads alongside pickled beets and pots of Thousand Island, ltalian and cream French dressings. All was laid out cafeteria style — no showpiece pheasants, no roast suckling pigs gnawing on ap- ples. Food was serviceable; supply plentiful. Waiters passed through occasionally to check on consump- tion rates, while a Marco Polo cook, attired in T-shirt, shorts and basketball shoes, took spot stock of smorgasbord trays. Desserts included rice and tapio- ca puddings, jelly and heaps of almond cookies. The Marco Polo smorgasbord packs few surprises, but is guaran- teed to vanquish the most persis- tent appetite for a mere $8.95 Open daily for tunch and dinner.
