Vancouver restaurant withstands test of time CHEZ MICHEL, 1373 MARINE DRIVE, WEST VANCOUVER, 926- 4913 MICHEL Segur is a vital combinatiun of keen entrepreneur and tireless restaurateur. For the past eight years, his Chez Michel restaurant has, from its second floor location, withstood such economic body blows as restraint, Expo’s culinary vacuum and the rise of numerous pretenders to the West Vancouver French continental cuisine throne. Most eateries have enough trouble corralling the fickle North Shore restaurant market from far more advantageous ground floor loca- tions. There is no secret to Chez Michel's longevity. Segur fills his restaurant with a natural courtesy and amiability. His tableside staff — featuring the unflappable and marvellously attentive Christian Denaire and assistant Philippe Segur, currently studying his older brother’s style — can efficiently service the entire 50-seat restaurant without leaving anyone drumming Bourguignone (deboned partridge marinated and cooked ia red wine, $15.95). { considered the bunny, but with Easter weighing heavily on my conscience, I settled on the New York Steak Dijonnaise ($13.50) while my wife, ever the seafaring type, chose the Seafood Crepe ($10.95). Both choices proved extremely enjoyable. The steak was grilled to precise rare specifications. Its sauce, a blend of French mustards, including the seedy Poupon, added a welcome nip to the meat. My wife’s crepe was filled with a good assortment of scallops, shrimps and crab all beneath a lively cream sauce and delicate crepe. For dessert we devoured a wonderful Sabayon au Grand ($9.95 for two). The egg white, concoction has the consistency of a heavy steamed milk and is beautifully light and creamy. Chez Michel remains a reliable locale for the consumption of first-rate French cuisine. Atmosphere, complete with rea- sonable harbor view, is crowded yet intimate. On a recent Friday evening visit, my wife and I found the restaurant packed with patrons taking advan- tage of Chez Michel’s Early Bird special. Between 5:30 and 6:30 p.m., Chez Michel features a selection of five entrees, all for $9.95. Segur’s latest marketing flourish has obviously hit a responsive . chord with the various restaurant - flocks on both sides of Taylor Way. . Since it began March 23, the early bird, bonanza has revived a formerly moribund dining period, which restaurant-goers usually in- vest in such last-minute prepara- tion as dashing about madly look- ing for matching socks or stock- ings without runs.
