Also on the plate: the great Austria duo of sauerkraut —- expertly prepared by Wieser with fermented white cabbage and car- away seeds — and dumplings — made with bread, onions, milk, eggs and parsley. Delicious and substantial. Guaranteed to subdue any hunger. Desserts, an Austrian past-time, included the grand Salzburg-style Soufflé (for four or more, $8.50 per person), Curd and Raisins Strudel ($6.50) and Emperor's Nonsense with plum sauce ($8). With nary a broccoli spear or alfalfa sprout in sight, this, admit- tedly, is not the cuisine of summer in the low-fat, high-fibre 1990s. Austrian fare emphasizes large plates laden with fine meats and ‘-tib-sticking dumplings. As presented by La Toque Blanche, however, its enduring qualities of substance and style are brought to the fore for all to enjoy. A Wieserian labor of love, a cele- bration of hearty central European gastronomy, presented by one of the North Shore's finest chefs. ; La Toque, of course, continues - to offer its regular menu (entrees $15 to $22, including Broiled Filet *, of Salmon, Breast of Duck .
