When I’m sitting here, alone at 6
a.m., I start to think about things
I'd like to serve to a B&B group.
Here are a few of my favorites that
might earn me some repeat
business:

Absolutely the Best
Waffles in the World

These are pure fluff and crunch.
3 cups sifted flour
4 tsp. baking powder
1 tsp. salt.
2 tsp. sugar

_ ¥% cnp melted butter, cooled

2 cups

4 eggs, separated

Sift dry ingredients together and

set aside. With electric mixer, beat
butter, milk and egg yolks to a
froth. Add to dry ingredients.

Fold in stiffly beaten egg whites.

Spoon into your waffle iron as
manufacturer Suggests. Bake.

If I were operating a B&B I'd
top with fresh fruit and whipped
cream in the summer, real maple
syrup and butter in the winter.
