stuff, he actually makes the
recipes! He tells how he
earned praise’ for his
Christmas baking. using my
shortbread and other
recipes. He'd like some ideas
for soup and _ casseroles.
Allan, you shall have soups
and casseroles to the very
limits of my research and
experience beginning with
this very column.

But first, stay, there is
more to this letter than a
struggling bachelor-cook’'s
grateful thanks. Allan has
brought his own little axe
along, hoping | will take on
the grinding job.

He is, he_ reveals, a
confirmed converted metric
user, having made his living
in the field of metric
coordination, and he would
like to see my recipes reflect
a similar conversion.

Mid-winter, when the cost
of fresh food is high and the
availability low, is the time
for frozen foods.

These simple guidelines
should make frozen food use
more efficient and safer.

When buying’ frozen
foods, make the frozen food
case your last stop in the
supermarket. Before
choosing the items, check
the temperature of the
freezer where they. are
stored. It should be -18°C
(o°F) or less

assistance of a blender, — 1

useful kitchen tool, neither
costly nor space-consuming.

Put some chicken stock
into the blender (or into a
saucepan), using either the
contents of a can of broth or
what you get when you
dissolve two chicken cubes
in two cups (500mL) — that’s
the correct way to show

A fan with a metric hang-up

— add the remnants of the
cauliflower, and a couple of
chopped green onions
(chopped very fine if you are
blenderless.) Blend on
highest speed (or let cook on
medium for ten minutes, and
break the cauliflower down
with a fork or a potato-
masher).

Pour the contents of the
blender into a saucepan and
add a cup (250 mL) of
creamo, stir to blend, and
season with a good shake of
nutmeg (taste, taste, taste)
along with a couple of
gurgles from the sherry
bottle. Heat just to simmer,
not to boil, and reap the
comphments.

P.S. Do the same thing
with leftover cabbage, celery
or bits of green peas and
beans that didn't get eaten.
Try seasoning with a good
pinch of curry instead of
nutmeg, and try the addition
of a trickle of lemon juice.
You can create your own
great soup. Keep notes.
