DUMPLINGS 1 teaspoon salt 2 cups unsifted all-purpose flour (about) In a kettle, fry bacon and onion until crisp. Add chicken pieces, which have been sprinkled with salt and pepper, and brown pieces on all sides. Add chicken broth and water to cover. Cover kettle and simmer gently for 1 to 1% hours or until chicken is. tender. Add bitters and vegetables. Sur to blend and simmer covered for another 20 to 25 minutes or until vegetables are tender. In a bowl, mix cream and flour. Pour mixture into chicken kettle and stir over low heat until sauce bubbles and thickens. Season to taste with salt and pepper. ~ While chicken is cooking: In a bowl, beat eggs, salt and milk until well-blended. Stir in flour until batter is the consistency of muffin batter. Drop mixture by heaping tablespoons into boiling salted water. Cover and simmer for 20 minutes. Serve chicken with vegetables and gravy and dumplings, garnish with finely chopped parsley. Makes 6 servings. HARVEST CHICKEN 2 pounds chicken parts ; tablespoons shortening can (10% oz.) condensed chicken broth 12 pitted prunes (about '4 cup) 2 tablespoons apricot preserves 1/8 teaspoon ground allspice “% cup water 3 tablespoons cornstarch 8 thin slices lemon Cooked rice In a skillet, brown chicken in shortening; pour off fat. Add broth, prunes, preserves and _ allspice. Cover; cook over low heat 45 minutes or until tender. Sur occasionally. Mix water and cornstarch; gradually blend into chicken mixture. Cook, stirring until thickened. Add lemon; heat. serve with rice. Makes 4 servings. (c) 1980 Suburban Features Frozen food breakthrough announced Frozen but not hard NEW YORK (UPI) - Claiming the most significant breakthrough since Clarence Birdseye pioneered frozen foods 50 years, Rich Products Corp. recently introduced a process that freezes but doesn’t harden foods and beverages. The new Freeze Flo process, Rich said, eliminates thawing and bacterial growth and cuts food waste. It requires no additives and foods frozen with the process can be stored at temperatures higher than previously possible. “The cost savings for the food service industry could be in the millions,” Rich President Robert Rich Jr. said of the energy saving aspect of the new process. The Buffalo, N.Y., company unveiled the freezing technique at a news conference at which it also announced the first food processor licensed to use Freeze Flo would be General Foods Corp., maker of the Birds Eye product line. General Foods will have exclusive North American rights to market refreshment beverages using the process and Rich said several other major food companies are now in negotiation for contract agreements. Freeze Flo can be used with beverages - including ice tea, orange and other fruit juices - sauces, batters, toppings, puddings, fruits, fillings, ice cream and other dairy products, baked goods and dough products. The process works by isolating and controlling the moisture or water content to bind it tightly to a product's natural substances such as protein, sugar, salt or un- saturated vegetable oils. This prevents the product from crystallizing or freezing. Rich said the new process would be a time saver for consumers because it eliminated the need for thawing and that food waste will be reduced because Freeze Flo products can be used and returned to storage without the risk of con- tamination.
