Mix together orange, lemon juices, onion, garlic, cloves, cinnamon, salt, pepper and the cumin in a bowl. Place the chicken pieces into a shallow pan and pour on the marinade. Coat them on all sides. Marinate covered and refrigerated for 12 hours. Remove the chick- en pieces, save the marinade. Select a heavy skillet pour in the oil, heat. Brown the chicken pieces on all sides . Pour on the saved marinade. Bring to simmer. Cover and cook for 40 to 50 minutes. Check for doneness — do not overcook. Place the pieces on a platter. Garnish with orange and lime wedges. Serve with rice and fresh homemade tortillas. Serves 4 to 6. Homemade tortillas 2c. masa flour (masa hari- na) 1 tsp. salt lc. warm water Method: Select a stainless steel bowl. Place the masa flour (available in most large supermarkets or speciality HEURES pert stores) into the bowl, add the salt. Gradually add the water and mix constantly. The dough should not stick to your fingers. You may have to add a little extra water. Divide the dough into 12 equal size balls. Place cach between nwo sheets of wax- Paper. Roll out with a rolling pin until they are about six inches round, Select a heavy skillet and cook cach tortilla 1-2 minutes on each side. Keep them warm, wrapped in a towel until service. Baked mango pudding. 4 ripe mangoes ( wash very well) 1 Tbsp. fresh orange juice 4c. granulated sugar 2 Tbsp. cornstarch 3 eggs, separated Method: Peel the ripe mangoes, add the orange juice and the sugar. Place in a blender and blend until smooth. Whisk the egg whites to a firm stage. Preheat the oven to 350F, Select a buttered pudding mould, and a pan of water. Whisk the yolks with the mangoes, and gently fold in the whites. Place into the mold. Bake in the pan of water for about 40 minutes. Remove and cool. When cold, unmould and serve. Serves 6. Avocado soup. 3 large ripe avocados 1 Tbsp. lime juice 4c. homemade chicken stock ( or the canned vari- ety) 1 finely crushed garlic clove : Bicomi Artists 2c. 33% whipping cream Method: Peel the avoca- dos, and place in a blender with the lime juice. Add the defatted chicken stock, garlic and the cream. Blend until smooth, about 2 minute. Chill tor a couple of hours, Garnish with lemon slices.
