restaurant’ but. the chef: ref-

I got lucky right away —
this recipe come - from
Shirley Louie’s “cookbook
“*Collectibles’’. The ‘‘Olga’’
referred to is a friend and
classmate of Shirley’s and
mine, Olga Rumen.
Although. I'd not tried ‘the
soup recipe I knew that it
had tc be good — Olga and
Shirley don’t fool around.
where food’s concerned.

My reader tried it and
called to say that he made it
for a guest and it was so
good that the’ guest went
home with a jar of soup for
next day.

OLGA’S BEER-CHEESE
soup

¥% cup butter

Y2 cup finely diced celery _

¥2 cilp finely diced carrots

% cup finely diced onions

VY cup flour
2% pints chicken stock

Y tsp. mustard

2 tbsps. Parmesan cheese

6 oz. cheddar cheese
11 oz. bottle of beer.

Saute the vegetables until

tender. Add flour and
mustard and chicken stock.
Cook .5 minutes. Blend in
cheese and beer. Simmer.

Season to taste.

package and freeze 12 dozen
goodies there’s rarely more
than six dozen when I go to
get them out.
