Spinach and Ham This is simply delicious, and a fabulous way to use the fast bits of ham left on the bone before it goes into the soup pot. 2 c. white sauce 1 bunch spinach lc. diced ham 2 green onions ¥ ¢. swiss cheese % tsp. nutmeg, % tsp. white pepper salt to taste Use any recipe to make up a medium white sauce in a fairly large bowl. (I use the microwave.) Wash, stem and chop fresh spinach, or you could thaw a package of frozen spinach. Add to hot white sauce and cook it for a minute or so, whisking well. Add a cup or so of finely chopped ham, and a couple of minced green onions, grat- ed swiss cheese, nutmeg and - white pepper, whisking and cooking until the ham is - Phyl an heated through. Shrimp and Cheese This is delicate and deli- cious. You could substitute crab or scallops, cut into small pieces, for the shrimp, or add chopped mushrooms for a different flavour. % Ib. shrimp 2 c. white sauce % c. swiss cheese 2 green onions 1 tsp. lemon juice ¥% tsp. tarragon % tsp. white pepper salt to taste Rinse fresh shrimp and set aside. Use any recipe to make u a medium white sauce. Add P grated cheese to the hot sauce, stirring it in until it melts. Mince green onions and add, along with lemon juice, tarragon and white pepper.
